Spicy Cucumber Salad

1 korean cucumber

1 teaspoon salt

1 tablespoon red chili flakes

1 tablespoon chopped scallion

1 clove garlic, minced

1 teaspoon rice vinegar

½ teaspoon sugar

1 teaspoon sesame oil

Sesame seeds

Thinly slice cucumber and sprinkle with salt.

Allow to sit in a strainer for 15-30 minutes.

Drain excess liquid and pat them with a paper towel (don’t squeeze them and you don’t have to remove all the salt or totally dry them).

Toss with all the remaining ingredients and adjust to your palate
