Vegan Calamari Rings

4 king trumpet mushrooms

Lemons

Parsley

Oil for frying

Batter:

½ cup gluten free flour

½ cup corn starch

1/8 tsp smoked paprika

½ tsp onion powder

Salt and pepper

1 cup club soda

This is for a tempura style batter.

Cut the mushrooms into rings by making a slice and then cutting holes in the middle with a round cookie cutter. You can also shred the mushrooms and toss them for more of a ‘leg’ texture.

Dredge in the batter and deep fry.

Sprinkle with nori powder to give a seafood flavor and make a tomato or tartar dipping sauce
