Jackfruit Fajitas

1 20 ounce can jackfruit in water or brine, drained and rinsed

1 yellow onion, sliced

2 bell peppers (different colors are great)

2-3 cloves garlic, mashed

1 cup vegetable stock

2 teaspoons ancho or chipotle chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For garnish:

Corn tortillas

Sliced avocado, sliced onion, cilantro, hot sauce, lime wedges

Cut the jackfruit into thin slices.

Heat a tablespoon oil in a pan and add onion and peppers and saute until they are soft

Add garlic and stir but don’t burn

Add the spices and toast until fragrant

Add jackfruit and vegetable stock and cook until the fruit has softened and liquid has reduced – 5-10 minutes

Using a potato masher, mash up the jackfruit so it looks like shredded meat

Season and serve with garnishes
