Crispy Peanut Butter Tofu

12 oz extra firm tofu, cut into 1” squares

Sauce:

¼ cup peanut butter

1 tbsp sesame oil

2 tbsp tamari or gluten free soy

2 tbsp honey

1-2 tsp chili garlic sauce

Press the tofu for 15-20 minutes to drain some moisture

Bake for 20 minutes to 25 minutes

Prepare sauce by mixing all ingredients together with a whisk. Adjust seasoning and heat

Toss the tofu with the sauce and allow to marinate for 15-20 minutes

Saute in a non-stick pan just to crisp and caramelize

Serve over rice
