Borscht is a well known staple in Russia, Ukraine and parts of Eastern Europe, utilizing mainly beets, cabbage and ginger. It's high in vitamins, minerals and antioxidants and is said to be one of the most rejuvenating soups out there, meant to bolster your energy & fortitude. This recipe uses beef stock but it can be substituted with vegetable stock for a vegan/vegetarian option

These are the Polish equivalent to a French crepe, and are a comfort food staple in Polish breakfast cooking. They can be eaten with a multitude of sweet or savory fillings, but berries and fruit preserves are a great option for antioxidants and fiber.
