Borscht is a well known staple in Russia, Ukraine and parts of Eastern Europe, utilizing mainly beets, cabbage and ginger. It's high in vitamins, minerals and antioxidants and is said to be one of the most rejuvenating soups out there, meant to bolster your energy & fortitude. This recipe has seen use as a postpartum recovery food as far back as the Tang dynasty in China. Seaweed was seen to have natural detoxifying and health benefits, which may be chalked up to the high calcium, iodine and fiber, and has become a symbolic and traditional mainstay in Korean maternal foods. Long seaweed is also symbolic of a long life. Beef can be omitted to make this dish vegan friendly.

These are the Polish equivalent to a French crepe, and are a comfort food staple in Polish breakfast cooking. They can be eaten with a multitude of sweet or savory fillings, but berries and fruit preserves are a great option for antioxidants and fiber. This recipe is made with eggs, butter and, goat milk, but egg replacers, coconut oil, and soy milk are excellent substitutions to transform this into a vegan dish.
