Makes 8 Scones
Ingredients:
2 Cups Flour
1 Tbsp Baking Powder
3 Tbsp Sugar
Zest from 3 Lemons
1/2 Tsp Salt
1/2 Cup Coconut
1/2 Cup Butter, Cold
1 Cup Heavy Cream
1 Tbsp Lemon Juice
3/4 Tsp Coconut Extract
1/2 Tsp Vanilla
Directions:
Preheat oven to 400F and line a baking sheet with parchment paper or baking mats.
Whisk together the flour, baking powder, sugar, lemon zest, salt, and coconut/ Cut in the butter until the mixture has small lumps.
In another bowl, mix together the heavy cream, lemon juice, coconut extract, and vanilla. Pour the liquid mixture into the dry mixture and stir to combine.
Transfer the dough to a floured surface and knead the dough until it forms a thick circle, Cut the scones into 8 triangles.
If you have any left over heavy cream brush the tops of the scones with it so that the come out of the oven golden brown.
Bake the scones for 15 minutes.
Once cooled, if desired, drizzle a lemon glaze on top of the scones.
Store the scones in an airtight container at room temperature.
