Makes 1 Loaf
Ingredients:
Streusel
3/4 Cup Brown Sugar
2/3 Cup Flour
1/2 Tsp Cinnamon
1/2 Cup Butter, Cold
Loaf
1/2 Cup Margarine
3/4 Cup Sugar
2 Eggs
2 Tsp Vanilla
2 1/4 Cups Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Tsp Salt
2/3 Cup Buttermilk
Directions:
Preheat the oven to 325F and line a loaf pan with parchment paper.
Streusel: In a small bowl, stir together the brown sugar, flour, and cinnamon. With a pastry cutter, cut in the butter until it becomes coarse crumbs. Set aside.
Loaf: Beat together the margarine and sugar until light and fluffy. Beat in the eggs and the vanilla. Fold in the flour, baking powder, baking soda, and salt. Gently mix in the buttermilk.
Place half of the loaf batter into the prepared pan and top with half of the streusel. Pour the rest of the batter in the pan and top with the remaining streusel crumbs.
Bake the loaf for 60 minutes. Let it cool in the pan for about 15 minutes before cooling it completely on a wire rack. Once completely cool, cut into even slices. Store any leftovers in an airtight container at room temperature.
