Ingredients:
Brownies
1 Cup Margarine, Melted
1 Cup Sugar
1 Tsp Vanilla
1/4 Cup Cocoa Powder
Pinch of Salt
1 Tbsp Red Food Chocolate
1 Tsp Vinegar
2 Eggs
3/4 Cup Flour
Cream Cheese Filling
4 Oz Cream Cheese, Softened
1/4 Cup Butter
1 Cup Icing Sugar
Red Sugar Sprinkles
Directions:
Brownies: Preheat the oven to 350F and spray a mini muffin tin with cooking spray. Mix the margarine, sugar, vanilla, cocoa, salt, red food colouring, vinegar, eggs, and flour together. Place 1 tablespoon of batter in each muffin cup. Bake the brownies for about 13 minutes. Let the brownies sit for a minute and then use the end of a wooden spoon to gently form a cup in the middle of each brownie. Let the brownies cool and then take them out of the tin.
Filling: Beat the cream cheese, butter, and icing sugar together until smooth. Pipe the filling into the brownie bites. I used a 1M tip from Wilton. Sprinkle the red sugar sprinkles on top of the cream cheese.
Store the brownies in an airtight container at room temperature.
