Makes 8 Scones
Ingredients:
2 1/2 Cups Flour
1 Tbsp Baking Powder
3 Tbsp Sugar
1/2 Tsp Salt
1/2 Cup Cold Butter, Cubed
1 Cup Coconut Milk
1/2 Cup Shredded Coconut
1/2 Tsp Coconut Extract
1/2 Tsp Vanilla
1/2 Cup Dark Chocolate Chunks
Directions:
Preheat the oven to 400F. Prepare a baking sheet with parchment paper, silicone baking mat, or cooking spray and set aside.
Whisk together the flour, baking powder, sugar, and salt. Cut in the cold butter using your hands or a pastry cutter, until the dough has pea-sized crumbles. Stir in the coconut milk, shredded coconut, coconut extract, and vanilla. Fold in the dark chocolate chunks.
Knead the dough on a floured surface until it comes together, taking care not to over-knead! Shape the dough into a flat disc and cut into 8 wedges. Place each scone on the prepared baking sheet. If you have any extra coconut milk, brush it onto the tops of the scones with a pastry brush. Bake the scones for 15-20 minutes until they are golden brown on top.
These scones are super yummy while they are still warm, so no need to let them cool completely before having a taste!
Store any leftover scones in an airtight container at room temperature. They will keep for about a week. Reheat the scones in the microwave with some butter spread on top.
