Makes 16 Cookies
Ingredients:
1/2 Cup Butter, Softened
1/2 Cup Sugar
1 Teaspoon Vanilla
1 Cup Flour
1/8 Teaspoon Salt
1/2 Cup Mini Chocolate Chips
Directions:
Preheat oven to 375F. Spray 2 9-inch round cake pans with cooking spray and set aside.
Beat the butter until it is soft. Mix in the sugar until it is nice and fluffy. Add in the vanilla, flour, and salt and stir until everything is incorporated. Fold in the mini chocolate chips. Divide the dough in half and press each half into the cake pans. Bake the shortbread for 10-12 minutes until the edges are golden brown. When the shortbread is done, score it with a knife, making sure not to cut completely through the shortbread. Once the shortbread has cooled completely, then break it apart.
Store the cookies in an airtight container at room temperature.
