Makes 2 Dozen Cookies
Ingredients:
1 Cup Margarine, Softened
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Egg
1/2 Tsp Vanilla
1 1/2 Tsp Orange Extract
Orange Gel Food Colouring
Pinch of Salt
3/4 Tsp Baking Soda
2 3/4 Cups Flour
1 1/2 Cups White Chocolate Chips
Directions:
Preheat the oven to 375F and line a baking sheet with parchment paper, a silicone mat, or cooking spray. Set aside.
Beat together the margarine, sugar, and brown sugar until the mixture is light and fluffy. Add in the egg, vanilla, orange extract, and food colouring* and mix well.
Slowly add in the salt, baking soda, and flour until completely combined. Fold in the white chocolate chips. Scoop the dough into tablespoon size balls and place on the prepared baking sheet. Bake the cookies for 10 minutes. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Store the cookies in an airtight container at room temperature. These cookies also freeze really well!
*When adding in the food colouring, use more than you think you will want. Adding in the dry ingredients and the baking process really tones down the colour of these cookies. So if you want a nice orange pop with that white chocolate chip contrast, add in more colouring than you think is necessary.
