| Author-note | In this work, we isolated and profiled Streptococcus thermophilus M2 from mattha, a traditional yogurt drink, demonstrating that it combines health-promoting and industrially useful traits. The strain inhibits common foodborne pathogens, exhibits significant antioxidant activity, survives harsh gut-like conditions, and displays strong adhesion and aggregation behaviors. It also coagulates milk rapidly and produces exopolysaccharides that improve texture, while showing a favorable safety profile. These attributes suggest S. thermophilus M2 is a versatile candidate for applications in gut health, food safety, and the development of fermented dairy products.
