Works in a very large kitchen (11.25m x 31.25m) that is always kept clean.
Has a small office just off the kitchen where he does all of his paperwork, ordering, appraisals of his staff.
Does have a computer in the office, however only uses it because he has too and only for things he can’t do by hand, for example emails, online ordering, and entering his stock checks for head office.
Walks to work, as he only lives 10 mins away
Works in a team of 10 (including himself)
He is the top person in the kitchen with only the Director above him.

While he likes to go out for drinks and watch sports, he doesn’t really socialise with anyone apart from his partner, and a couple of close friends that he sees once in a blue moon.
Is looking forward to retirement (as he is opting for early retirement), and wants to ensure that his replacement is fully trained in the next couple of years.
Is aware of new cooking techniques and the range of different foods from across the world. But doesn’t want to utilise them, however will like to see his replacement use them.
Doesn’t really like technology, this includes for training.
Is very hands on when it comes to work.
Feels that the way he comes across when dealing with offenders/prisoners is hurting his business, however he is unable to get over his experience of being in prison as well as his experiences of how he was treated by other prisoners. This in turns comes out as anger and frustration with offenders/prisoners.
The second concerns is that because of his mentality, he feels like he cannot change.
