I have made many apple crumbles in my time but this is no ordinary crumble its an apple crumble cheesecake.
4 peeled apples then sliced then coat in lemon juice to prevent going brown
75g sultanas that have been soaked in sherry
100g brown sugar
1 tsp cinnamon
Place the Apple sultana layer In an oven proof dish mix, Then Bake for 25 min at 160 C and lay to one side.
Then In a blender for the base place
15 digestive biscuits
250 g melted butter or less
Blitz together and lay to one side
For the crumble layer you will need:
100g plain flour
100g brown sugar
50g oats
100g butter
Pinch of salt
For the Cheese cake filling you will need:
500g cream cheese
1 tub mascarpone
100g white sugar
Seeds of 1 vanilla pod
mix together with a metal spoon when smooth
Add 3 whole eggs and blend again
Line a circular baking tray with baking paper. Evenly cover the base of tray with digestive and butter mix, pressing firmly into all edges. Add cheese filling, smoothing out to ensure a nice level layer. Then cover as evenly as possible with apple slices / sultana mix you have baked. Finally coat with oat crumble mixture.
Heat oven to 160 C (fan) bake for 1 hour or until golden brown
Let chill before removing from the baking tin.
