My Moroccan style Hummus. while you can't have Chickpea as it uses most of your daily carb allowance you can change the chickpeas for cauliflower. This creamy and lush and comes out @ about 10 Carbs, 236 Cal and total fat of 20 with 5g of protein if divided into 4 servings.
400g Cauliflower
1 banana shallot (normal onion is high in carbs about 14 carbs)
2.5g Ginger or a small slice of fresh
10g garlic
2g Cumin
2g ground paprika
2g Ground Turmeric
1 red pepper
50g Tahini. My homemade Tahini
40ml Good quality Extra Virgin Olive Oil
50g Kalamata Olives
5g Chopped Parsley
Juice of one lemon
Clean and cut the cauliflower and separate the florets.
option one: cover in olive oil and place on baking tray and roast in oven for 30 min @ 160 C
option two: Microwave the cauliflower and red pepper for 5 minutes till tender.
Once done add all the ingredients except the parsley in a food processor and blitz till you get a nice smooth looking hummus.
Keep tasting for seasoning and flavour and add additional quantities you can add but not take out.
Once done transfer to a bowl and add the parsley and mix well.
Garnish with cayenne pepper, more virgin olive oil, parsley and a black olive.
