My mother would make these burgers and also use the mixture to make koftas on a flat bladed skewer. The only thing I have added is the nutritional yeast flakes while my mother would have used dried bread crumbs.
500g minced lamb >25% fat
1 red onion, grated
2 cloves garlic, crushed
5g dried parsley
5 mint leaves, finely chopped
5g dried oregano
5g ground cumin
20g nutritional yeast flakes (fortified with B12 providing a rich source of B vitamins)
2.5 paprika
2.5g cayenne pepper
2.5g Kosher salt and black pepper
To Serve: Warm pita bread's or buns, with a good helping of homemade tzatziki and a greek salad of sliced tomatoes, sliced green bell pepper, sliced cucumbers, sliced red onions and not forgetting Pitted Kalamata olives, along with some crumbled feta.
