This is an easy keto dijon chicken thighs or breast recipe. It's perfect for the perfect low carb dinner for those busy weekdays. serve with a bed of green vegetables. If you have an all-metal frying pan/skillet you only need one pan. If using thighs buy them with bone-in as it adds to the flavour.
TOTAL TIME: 35 minutes. The sauce makes enough for four servings
chicken breast or thighs with skin on x the servings wanted
chicken OXO cube to make 125ml chicken broth
.5g kosher sea salt
.5g ground black pepper
2 Tbsp olive oil
2 cloves garlic, chopped
60g of chopped onions
150ml double cream
5g fresh thyme, chopped
10g whole grain or dijon mustard
10g fresh parsley
Preheat oven to 170 deg C, Season chicken breasts with salt and pepper set aside.
Heat frying pan over medium-high heat and add olive oil.
Sear chicken breasts on both sides, remove from frying pan and set aside.
Add the garlic and onion to the pan, then deglaze the pan with chicken broth made from chicken OXO cube.
Add the double cream, fresh thyme, and dijon or whole grain mustard. Add chicken back to pan, place in oven and bake for 8 to 15 minutes.
Remove chicken from the oven and let it rest for 5 minutes. Add some thickening agent if needed over a medium heat.
Plate up and spoon sauce over the top. Garnish with parsley and enjoy.
