This is a very filling keto dinner, serves four. The bacon and chilli flakes give it that extra bit of flavour. Serve with vegtables.

20ml avocado oil or olive oil
140g red onion, chopped
100g celery, finely chopped
3 cloves garlic cut finely or crushed
1 tsp. dried oregano
1 tsp. chilli powder/flakes
500g > 12% minced beef
100g grated cheddar
50g almond flour
20g nutritional yeast
25g grated Parmesan
2 eggs 50g
5ml soy sauce
5g kosher salt
5g black pepper
Freshly ground black pepper
3 rashers of thick bacon with fat on
Preheat oven to 200°C (180ºC fan). coat a medium baking dish with olive oil. In a medium pan over medium heat, heat oil. Add onion and celery and cook until soft, 5 minutes. Stir in garlic, oregano, and chilli powder and cook until fragrant, 1 minute. Let mixture cool slightly.
In a food processor or a large bowl, combine minced beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, soy sauce, and season with salt and pepper. mix well and place into a large loaf tin, then cover with bacon.
I use a Meater thermometer and set to 66 deg and it sorts the cooking time or Cook until bacon is crispy and beef is cooked through about 1 hour.
Any leftover is good served cold or fried with eggs the next day
NB. The Meater thermometer cost from £80.00 to £125 but IMHO it's worth every penny. In the time I have had it I've had no problems with the connection to the app and the cooks have been perfect, never over or under. I even use it when baking bread.
