While these buns might seem to be a lot of effort when you can buy six for £1.00 you may not think it's worth the effort but if you like cooking and you love soul food these are great and you know you have made them all yourself. Thes buns are perfect for burgers, but also fine for any filling you would like.
All ingredients are at room Temperature
500g Bread Flour
90 ml Water
90 ml Milk
35 ml light olive oil
2 fresh Eggs.
25 g Sugar
1 Tsp Dried Yeast
1 ½ Tsp Salt
3 tablespoons (43g) melted butter
Sesame seeds
In a large clean bowl place the water, milk, oil, eggs, sugar yeast along with half of the flour and mix to form a batter. Now slowly add the remaining flour along with the salt, then mix to form a fluffy but wet dough.
Turn out on to a work surface and using a dough scraper, knead with one hand and scrape from the surface with the other. You will need to do this for about 5-6 minutes until the dough comes together. Now stretch and fold using the dough scraper if needed for a further 8-10 minutes, the dough will still be quite sticky, but don't worry this is good.
Lightly oil the bowl and place the dough turning to ensure it is covered in oil. Cover with cling film and allow to prove for an hour at room temp. Then remove onto a lightly oiled surface. Stretch out and fold into thirds and repeat this process. Return to the bowl, cover with cling film and allow prove for another hour.
Remove from the bowl onto a lightly oiled surface and cut into 8 even pieces. Form into loose balls and place on a tray and cover in cling film and prove for 15 minutes.
After the 15 minutes dust with flour and then press flat. Fold in the sides and pinch the using two hands form into a tight ball and place on the baking tray lined with baking paper. Now allow to prove for about 90 minutes or until the buns have trebled in size.
Brush with a little water and the sprinkle with sesame seeds if wanted.
Heat your oven to 180°C and place a metal dish of hot water on the bottom rack, don't use cold. place your buns on the middle shelf and bake for about 14-16 minutes until golden. Remove them from the oven, and brush with melted butter. This will give the buns a satiny, buttery crust and place on a cooling rack.
