Since being ok Keto I have wanted a crunchie biscuit to have with cheese after a meal, if you would like the same this one fits and it's low carb. If you have a gluten problem use coconut flour instead of the Vital Wheat Gluten. This mix should give you 12 biscuits and one to test. The baker's dozen.
250g Fine Almond Flour or Ground Almonds
65g Vital Wheat Gluten
5g Yeast (not for rising but extra taste)
10g Baking powder
10g English mustard ( you can miss this out)
128ml Full cream
100g Cheder cheese
1 Egg
2.5g Sea salt
Choose one of these:
5g Psyllium Husk (can be left out it's just a good soluble fibre)
5g of Inulin (can be left out it's just a good soluble fibre)
Herbs to add
2.5g Basil
2.5g Oregano
Or you could add a herb of your choice. You could also replace the mustard with Marmite
Preheat the oven to 180 Celsius.
Place the dry ingredients in a food processor and mix.
Add the egg, cream and cheese and combine into a dough.
Rap in clingfilm and place in the fridge for 20 min
Roll out and cut out and place on a baking sheet lined with parchment paper.
Place in oven for 25min until golden brown.
