NPA Bakery (Level 4) & Barista Skills (Level 5)
This is an intensely practical course, students will be taught skills required for success in current and future employment within the bakery industry.
This course includes a qualification in Barista Skills where students will be professionally trained in the art of coffee making. Students will learn how to make and serve a range of beverages. World Host training at Fife College. Good attendance is key
Assessment:
Continual practical assessment and written pastry portfolio
Craft Baking: a variety of 10 baked products to be made
Bread: 9 varieties of bread products to be made
Pastry (level 5): make a range of products using choux, puff and shortcrust pastries
Cake Decorating: prepare a range of cake types and use a range of decorative techniques.
Barista (level 5): observation checklist and multiple choice.

Practical Cake Craft
This is a practical course where students will develop their knowledge and understanding of the following topics:
Different methods of cake production.
Functional properties of ingredients used in cake production.
Technical skills in cake baking and creative skills in cake finishing.
Cake design, developing and demonstrating highly imaginative techniques in the production of their cakes.
Students should study this course if they are hard-working, focused, like a challenge and enjoy practical lessons. Creativity is essential.
Assessment:
N5 written exam (25%), written assignment (22%) AND full day practical exam (53%)
