S3 Hospitality - Skills for Work
What will this look like?
4 periods a week, mixture of practical and theory, some weeks will be more practical than others. There will be a minimum of 2 practical periods a week.
Course content:
Working in the Hospitality Industry; learning about all the different job roles of people working within the industry.
Skills in a professional kitchen; Learning about health & safety, food hygiene, knife skills and preparing, cooking and presenting food.
Range of practical dishes designed to develop skills, cover a range of food preparation techniques and processes. All with a focus of developing skills desired by the food industry.
S4 Hospitality Skills for Work Level 4
This is a practical course, which covers a range of cookery skills, techniques and processes. Students will gain front of house experience by participating in events such as Afternoon Tea, Parents evening, serving refreshments at the school show.
Developing the Young Workforce -Students gain experience of a working in a commercial kitchen via work placement in a local restaurant or café.
Practical lessons will include knife skills, various food preparation techniques and different cookery processes.
Course content:
Front of house; learning about all the different job roles of people working within the industry.
Intro to events; plan, prepare and run an event for an occasion.
Assessment:
4 units- mostly practical assessments with small written/oral elements and no final exam.
