Ingredients:
1) 1 cup of dry Quinoa
2) 2 cups of water (to cook the quinoa)
3) 1 bag of fresh spinach (you may use frozen too).
4) 1 small onion
5) the juice of 2 lemons
6) 1 tablespoon olive oil (to cook the onion)
7) 2 garlic cloves
8) 1 teaspoon salt, pepper, cumin, 7 spice.
Steps:
bring the quinoa and water to a boil then reduce the heat and simmer for 25 minutes on low. in another pan, add your oil and stir fry the onion for a couple of minutes. add your garlic and spices to the onion so it can absorb them. next add your spinach and cook until it wilts. Once everything is cooked, add your spinach mixture to the quinoa and mix. lastly, add the lemon juice and serve it hot.
