Ingredients:
◦ Chickpea can
◦ 1/2tsp Salt, pepper, paprika, garlic powder
◦ 1 large cucumber
◦ 2 medium tomatoes
◦ 1 avocado
◦ 1 head of lettuce
Dressing:
◦ 2tbs olive oil
◦ 2tbs lemon juice
◦ 1/2tsp salt, black pepper
Mix the chickpeas and spices. Bake the chickpeas at 400 F for 25-30 mins until crispy.
Chop and dice all the vegetables, then add to a bowl with the chickpeas on the top.
Mix together the dressing and pour the dressing all over the salad and toss together.
