2 bunches of fresh collard greens
1 large onion
2 garlic cloves, minced
3 c. low/no sodium broth
2 tbs. balsamic vinegar
1 tsp pepper
1 tsp red pepper flakes
1 tsp liquid smoke
1 tb. olive oil
1 tb. sodium-free seasoning (Mrs. Dash)
Variations: Add a low-sodium bacon and omit olive oil for a more traditional recipe. Turkey bacon or vegetarian bacon may also be used.

Thoroughly soak and wash collard greens, making sure no grit or dirt remains
Cut or tear the collard greens into bite size strips or pieces
Heat oil in large pot, add onions and sauté until tender.
Add garlic and sauté until fragrant (30s.)
Add collards to the pot and fry until wilted.
Pour in broth and seasonings, reduce heat to low, cover and cook for 45 min, or until greens are tender
