One of the big themes that comes out of both Genesis creation stories is that God made humans to be different to other animals. This shows Catholics and other Christians that humans have been created in a way that makes it possible for them to have a relationship with God, as well as each other.

The Creation of Adam (Italian: Creazione di Adamo) is a fresco painting by Italian artist Michelangelo, which forms part of the Sistine Chapel's ceiling, painted c. 1508–1512. It illustrates the Biblical creation narrative from the Book of Genesis in which God gives life to Adam, the first man.
26 Then God said, “Let us make mankind in our image, in our likeness, so that they may rule over the fish in the sea and the birds in the sky, over the livestock and all the wild animals,[a] and over all the creatures that move along the ground.”
27 So God created mankind in his own image,
in the image of God he created them;
male and female he created them.
