I’m not a fan of sugar or butter cookies, but this recipe from my mother-in-law Esther is yummy. It’s crispy but airy, a real winner with everyone.
1 cup sugar
1 cup powdered sugar
1 cup butter (2 sticks)
1 cup oil
2 eggs
4 cups + 4 tablespoons flour (often have to add a little more)
½ teaspoon salt
1 teaspoon soda
1 teaspoon cream of tartar
2 teaspoon vanilla (Esther uses 1 t vanilla, you can also substitute with almond extract)
Cream butter and sugar, add oil, beat in eggs. Mix in the dry ingredients. Roll into balls, press down with glass dipped in sugar. (Pick a glass with a pretty design on the bottom.) Bake at 350° for 12-15 minutes or until bottom is golden.
