Apfelkuchen

Recipe from Shu-Ming’s high school German teacher (Redmond High School). So yummy that I still remember it 30 years later and asked for the recipe.

1 cup butter

1 cup sugar

2 cups flour

1 – 2 eggs

1 teaspoon baking powder

5 – 6 apples

Vanilla

Cinnamon + sugar

1. Beat butter until fluffy. Blend in sugar & eggs. Add vanilla to taste (~ 2 tsp). Blend in flour and baking powder. Dough will be very wet.

2. Peel & slice apples into thin slices. Turn them over in the sugar and cinnamon.

3. Put the dough in 2 pie pans (OK to use fingers to spread) & fill them with the sugar coated apples (squeeze extra water out of apples before filling the pans). The rest of the dough is to cover the apple contents. Patch the dough over the top like cobbler. Do not need to cover the entire top, dough will expand together and the holes keep the Kuchen from becoming soggy. (If using glass pans, don’t need to put cooking sheet under glass pan. Check that the Kuchen is baked through.)

Temperature: 375°

Time: 40 minutes

Sprinkle the still hot cake with small butter pieces.
