Kolachky

INGREDIENTS:

Dough

2 x 8-ounce packages cream cheese, room temperature

2 cups (4 bars) unsalted butter, room temperature

4 cups all-purpose flour

Filling

Jam (choose not too liquid ones) or other fillings such as SOLO brand premade fillings, ½ lb finely chopped walnuts + honey to bind, 1.5 c dried fruit such as apricot or peach + 0.5 c sugar + 1t cinnamon + 1t vanilla, etc.

DIRECTIONS:

  1. In a large bowl, mix together cream cheese and butter until well blended. (Use the dough hook with a stand mixer.) Mix in the flour 1 cup at a time. Mix well until the dough is no longer sticky. Divide the dough into four portions.
  2. Preheat oven to 400 degrees F. On a lightly floured surface, roll one portion of the dough into a 15”x9” rectangle. Cut the dough into 3x3 inch squares. Place a teaspoon of filling in the center of each square. Overlap two opposite corners of dough over filling and pinch tightly to seal. Place the cookies 2 inches apart onto ungreased cookie sheets lined with parchment paper. Sprinkle with granulated sugar on top of each cookie. Repeat with the other 3 portions of dough. Each portion makes about 12 cookies.
  3. Bake for ~13-15 minutes in the preheated oven, or until bottoms are lightly browned. Cool 1 minute before removing from pan to counter lined with cut-up brown paper bags. Store in air tight container.
