This is an extremely popular dessert with kids. It’s the kind of dessert that you can whip together in just a few minutes and yet tastes like you slaved for hours.
1.5 pounds berries (blackberries, strawberries, raspberries, blueberries, etc.)
2 cups heavy whipping cream
4 Tbsp (or to taste) maple syrup
(Optional)
4 Tbsp + 2 tsp water
4 Tbsp sugar
2 tsp unflavored gelatin
Wash and dry berries.
Combine water, sugar and unflavored gelatin in a small saucepan. Melt over low heat for 3 minutes. Cool slightly. (Note, this step can be skipped if served right away. The gelatin helps storage, but left overs of this dessert is usually not a problem.)
Whip heavy whipping cream with maple syrup until stiff. Add gelatin mixture and whip until combined. Fold in berries and serve.
