Egg steamed meat with rice was my favorite meal in elementary school. My great-aunt made this for me almost weekly. Sadly we never learned her recipe. This recipe is based on one from my college friend Cindy Ran, whose family is also from Fu Jian like my mom’s side of the family. This is now one of my kids’ favorite meals. I love how quick it is to mix the ingredients and that the meat can cook in the rice cooker with the rice while I’m out running errands.
6 eggs
1 pound ground pork
3 green onions, chopped
2 T soy sauce
2 T corn starch
3 T sugar
1 t salt
Dash of pepper & ground ginger
~1/5 cup water (2 slots on the rice cooker cup)
Mix all ingredients in the pan that sits on top of the rice in a rice cooker. Cook along with the rice in the rice cooker. When the rice is done, the meat will be done too. If you don’t have a rice cooker, steam the meat in a steamer for ~ ½ hour.
