This is a cake I like to make for myself, although others enjoy it too.
Dry Ingredients
2 cups whole wheat pastry flour
1 cup ground almond meal (or ½ almond, ½ coconut flour)
1 cup sugar
½ cup packed brown sugar
1 t cinnamon
1 t salt
1 t baking soda
1 ¼ cup vegetable oil (I use olive oil)
3 eggs
1 t vanilla
1 cup candied pecans, chopped (highly recommended, can buy from Trader Joe's)
1/2 cup raisins (optional)
4 cups apples, peeled & sliced/chopped (Russets/Golden Delicious/Granny Smiths/Baldwins/Cortlands, or whatever you have on hand)
Preheat oven to 350˚. Wisk dry ingredients to thoroughly combine. Wisk eggs, oil & vanilla together. Stir into dry ingredients to just combine. Fold in apples & pecans. Batter will be quite stiff. Add ¼ cup water if desired. Spread batter into ungreased tube pan or 9”x11”x2” baking dish.
Bake 60-65 minutes.
