Fried Pork Chops

This is very popular with the kids. Original recipe from Chinese Cooking For Beginners by Huang Su-Huei.

6 pork chops (~1.3 lbs.)

Marinade Optional Sauce

2 T water 3 T chopped green onions

1 T soy sauce 2 T chopped ginger

½ T cooking wine or sherry 1 T finely chopped garlic

½ t salt ½ T sugar

1 t sugar 3 T soy sauce

1 t white vinegar 2 T white vinegar

2 fresh garlic cloves, chopped or mashed

1 egg


1 T cornstarch

Cooking oil (high temperature such as avocado, canola, or peanut oil)

Tenderize the pork chops with a meat mallet. Add Marinade and mix. Add cornstarch and mix. Marinade for 1 hour. Heat a large frying pan to very high temperature. Add oil to coat bottom of pan and pan fry the pork chops until they are golden and thoroughly cooked. Either serve the pork chops as is, or serve with the optional sauce.
