Farine Pudding
Ingredients:
4 oz farine
2 eggs, separated
10 oz sugar
1 pt milk
2 bay leaves
jam for spreading
Instructions:
Beat egg yolks with half the sugar.
Heat milk with the bay leaves. Pour on to beaten egg.
Spread some jam on the bottom of a greased ovenproof dish. Pile the soaked farine on top of the jam.
Strain milk mixture over farine. Allow to soak for a while. Bake in a moderate oven, 350ºF, for about 20-25 minutes until golden brown.
Whisk the egg whites until stiff. Fold in the remaining 5 oz sugar. Spoon over the pudding.
Return to oven for about 7-8 minutes to brown top.
Serve hot.
