Ingredients
25g Butter
25g Flour
85g Macaroni
200ml Milk
150g Cheese (Cheddar / Mozzarella / to taste)
Method
Oven 200OC
Grate Cheese, measure out all ingredients and have them to hand before starting.
Heat up some water in a saucepan, when boiling add the Macaroni for the length of time shown on the packet.
While waiting for the Macaroni to cook.
Melt the butter in another saucepan
Then add the flour, mix it together to form a paste, there should be no flour visible
Then add a little milk, not even enough to coat the bottom of the pan, whisk or mix in the milk so it is again all paste with no milk around the edges.
Add the milk a little at a time and keep mixing, it will move from a paste to a thick sauce and then to a thin sauce. This process will take 5 mins.
With all of the milk added turn up the heat to 4 and keep whisking or mixing.
Add the cheese a little at a time, making sure it melts before adding the next lot.
Keep mixing with big bubbles for a couple of minutes then take off the heat.
Strain the macaroni and place in a oven proof dish.
Stir in the sauce.
Add breadcrumbs, cook for 15-20 mins.
