175g caster sugar
100g Butter/margarine
175g s.r.flour
2 eggs
rind of 1 lemon
125ml milk

juice of 1 lemon
50g caster sugar
Method
1. Pre-Heat the oven to 170OC
2. Line either 2 x 1 lb loaf tins or 1 large cake tin
3, Cream butter & sugar together using a whisk
4, Slowly add beaten eggs
5, Fold in half of the sieved flour and half of the milk
6, Fold in the rest of the flour and milk
7, Add grated lemon rind.
8, Place mixture in the tin or tins
9, Bake for approx 45mins
Topping
10, Mix the lemon juice and sugar.
11, pour over the cake when cooked.
12, Offer Mr Smith a slice
