1 cup butter
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups Baking Mix
3 cups quick-cooking oats
1 teaspoon cinnamon
1 1/2 cups raisins
Preheat oven to 375 degrees. In a large bowl, beat together butter and sugars until creamy. Add eggs and vanilla; mix well. Stir in the Baking Mix, oats and cinnamon; mix thoroughly. Stir in the raisins. Drop by rounded tablespoonfuls onto ungreased baking sheets.
Bake for 10-12 minutes until lightly browned.
Cool on baking sheets for a few minutes and then remove to wire racks to cool completely.
Makes about 4 dozen cookies.
