2 to 3 lb pork loin cut into 4 to 5-inch chunks
Small onion, sliced
1 T oil
2 cups salsa
Salt
Pepper
Cumin
Chili seasoning
Set Instant Pot to saute. Heat oil, add onions; cook 3 to 5 minutes. Add pork, brown on all sides. Add salt, pepper, cumin, and chili seasoning to taste. Add salsa, deglaze pot.
Cancel saute and set pot to manual high pressure. Make sure it is set to sealing. Set timer to 35 minutes. When done, natural release for 10 minutes then release remaining pressure.
Shred with two forks.
