4 cups blackberries, rinsed
1/2 cup sugar, use more or less depending on how sweet the berries are
1 teaspoon lemon zest
1 tablespoon lemon juice
1/2 teaspoon cinnamon
2 tablespoons cornstarch for thickening
Place berries, sugar, lemon zest, lemon juice, cinnamon and cornstarch into a 9 x 9-inch baking dish; stir to coat berries evenly with sugar mixture. Let sit for 30 minutes.
1 1/2 cups Baking Mix
3 tablespoons sugar
4 tablespoons cold butter, cut into small pieces
1/4 cup milk
1 egg, lightly beaten
Preheat oven to 350 degrees. In a medium bowl, combine Baking Mix and sugar. Cut in butter until well combined. Stir in milk and egg until a soft dough forms.
Use a large spoon to drop the dough onto the berries in mounds.
Bake for 30 to 40 minutes or until bubbly and cobbler topping has browned nicely.
