Chunky Apple Cake

1/2 c melted butter

1 1/2 cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup whole-wheat flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

3 medium apples, peeled and cut into chunks

1 cup chopped walnuts

Preheat oven to 350 degrees Fahrenheit.

Stir together butter, sugar, eggs and vanilla.

In a separate bowl, combine flours, baking soda, salt and cinnamon.

Add dry ingredients to wet; stir until combined.

Stir in apples and walnuts. Batter will be thick, more like a cookie dough than a cake batter.

Spoon into a greased 13 x 9 x 2-inch pan.

Bake at 350 degrees for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.

For glaze, combine 1 cup powdered sugar, 1 teaspoon maple extract and enough maple syrup to make a pourable glaze. Drizzle over partially cooled cake.
