6 or 7 green chiles, roasted, peeled and seeds removed
4 cups grated cheese, any combo you like
4 eggs
3/4 cup milk
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons all-purpose flour
Preheat oven to 350 degrees. Grease an 8-inch square baking pan.
Layer half the green chiles in the pan; top with half the cheese. Add another layer of the chiles and the rest of the cheese.
In a large bowl, beat the eggs, add the milk, baking powder, salt and flour and mix well. Pour over the chiles and cheese.
Bale for 45 minutes until set and the top has browned.
Let cool slightly before serving.
