*Blueberry Muffins

1 1/2 cups Baking Mix

1/2 cup all-purpose flour

1/2 cup butter, melted

3/4 cup granulated sugar

2 eggs

1/2 cup milk

1 teaspoon vanilla

1 cup fresh or frozen blueberries

Preheat oven to 425 degrees.

Spray a jumbo muffin pan with cooking spray or use paper liners.

In a large bowl, combine Baking Mix and flour.

In a separate bowl, combine butter, sugar, eggs, milk and vanilla. Add to dry ingredients and stir until just combined. Gently stir in blueberries.

Spoon batter into prepared pan. Sprinkle tops with raw sugar.

Bake for five minutes at 425 degrees and then lower heat to 375 degrees and bake for another 18 minutes.

Cool in pan for five minutes and then remove from pan and cool on rack.

Makes 6 jumbo muffins.
