Vegetable Beef Soup
1-2 lb. beef (such as stew beef or cut up a sirloin steak, etc., whichever is cheaper or on hand)
1 14.5 oz. can tomatoes (I used the diced ones)
2 carrots diced
2-3 stalks celery with tops diced
2 medium onions, diced
1-2 medium potatoes, chunked (I leave the skins on)
3 c. water
1 t. salt
4 whole peppercorns
3 beef bouillon cubes
1 lb. bag frozen mixed vegetables*
Put all ingredients in crockpot. Cover and cook and Low 12 to 24 hours. (High: 4 to 6 hours).
*May be added during last hour or so of cooking if desired.
**Sometimes I buy a bag of frozen stew veggies and throw those in instead of the carrots, celery, onions, and potatoes, but I definitely prefer to fresh veggies, when I have time.
