Pork and Beans Bread
Preheat oven to 350 degrees, rack in middle position.
Ingredients:
15 oz. can of pork and beans
4 eggs, beaten
1 c. vegetable oil
1 t. vanilla extract
2 c. white sugar
1 t. baking soda
1/2 t. baking powder
1/2 t. salt
1 1/2 t. ground cinnamon
1 c. chopped pecans or walnuts
3 c. all-purpose flour
Prepare two 9x5 inch deep loaf pans with Pam.
Don't drain the pork and beans. Pour them into a food processor or blender, juice and all, and process until pureed smooth with no lumps.
Place the beaten eggs into a large mixing bowl. Stir in pureed pork and beans and mix well.
Add oil and vanilla extract. Mix well.
Add sugar and mix it in. Then mix in baking soda, baking powder, salt, and cinnamon. Stir until incorporated.
Stir in the chopped nuts.
Add the flour one cup at a time, stirring after each addition.
Divide between two pans. Cook at 350 for 50-60 minutes. Toothpick inserted in middle should come out dry. Cool 20 minutes. Run sharp knife along edge to loosen, and then tip it out onto the wire rack. Cool completely. Can be frozen for up to three months.
