OK. I do not use my own bread. I do not make bread stale and chop it into pieces, etc. Instead, I buy a bag of the blue (white/wheat with herbs and seasonings) Pepperridge Farm stuffing and follow the instructions. (I do use chicken broth rather than water, if I have it. I add onion and celery.) Then I stuff the bird.
I usually make twice as much (two bags) as I need and package the rest of the stuffing in foil to cook separately from the turkey.
