Cauliflower Casserole
This was a trial by error type of dish, but it turned out fantastic.
I cut up a head of fresh cauliflower, 8 oz. sliced portabella mushrooms, and 1/4 c. celery slices into a crockpot.
I then mixed a can of cream of celery soup, a half cup of mayonnaise, a half cup of milk, and 8 oz. of Swiss cheese (grated) and pour that over the vegetables. I cooked the mixture on high for an hour and a half---which wasn't long enough.
I then poured the contents into a casserole dish with a lid, and cooked that an additional 8 minutes in the microwave before putting the whole thing (with the lid) into the oven at 400 degrees for about ten minutes. The celery was not completely cooked, but the rest was delicious.
It would probably be a good idea to precook the cauliflower or just plan on cooking the whole thing longer in the crockpot.
