1. In a large bowl, use an electric mixer to beat the butter and sugar at medium speed until well-combined and smooth, about three minutes. Add the eggs, vanilla, and almond extract and beat until combined. On low speed, slowly add in the flour and baking powder and beat until mixed. Place one dough portion between two sheets of parchment and roll out to 1/4-inch thickness. Repeat with the remaining portion of dough. Place the two sheets of dough on a baking sheet and chill for at least one hour or up to one day. You can also freeze it for 30 minutes.
2. Preheat the oven to 350°F. Remove the dough from fridge and cut into snowflakes with a cookie cutter. Take the shape cutter to the prepared baking sheets. If the dough is warm, freeze for 15 minutes or until firm. If dough is warm, freeze for 15 minutes or until firm.
3. Bake for 10 minutes, or until the cookies are set and beginning to get brown. Be careful not to over- bake. Let the cookies cool for five minutes before removing the cookies from the sheets; wait until cooled completely.
4. In a bowl, use a spoon to mix up all the ingredients and when well mixed, put the icing in a piping bag with a small tip and ice the cookie to make it look like a snowflake. When done you have a perfect tasting cookie for you and friends/family to devour.
