HOSPITALITY & CATERING

Welcome to Hospitality & Catering

Our Hospitality and Catering programmes are ideally suited to those with a passion for creating great food and delivering high-quality customer service. Students study their practical elements in our modern, stylish, commercial training kitchens and public restaurants to get a real-life experience of working in this exciting and fast-paced industry. Students take a great deal of pride in their work and many enter local and national competitions to expand their skills and experience.

Future career opportunities may include roles such as a head chef, restaurant manager or event manager, and we are proud to see many of our students have used their skills to travel the world or have secured employment at top Michelin-starred restaurants.

Cooking course training

"I chose to study at Petroc mainly due to the course and facilities available. I particularly liked the sound of this course due to the content and large focus on the theory content (as well as practical). It was also partly due to the very modern facilities on offer (new kitchens etc) and being able to work hands-on in the Taw Restaurant.

Although I want to work in the food industry (bakery), I particularly enjoyed the food theory and management lessons. Last year I was chosen to go onto work experience abroad, in Gothenburg, Sweden which was a really special opportunity and one that I was very pleased to have taken part in.

I currently have a conditional offer to study Bakery Science and Technology at London Southbank University which is something I am really excited to begin. After uni, I plan on remaining in London and gaining further experience working in bakeries and patisseries, before one day having my own business.

Before you join this course, ensure that you have a strong interest in food. The course is extremely rewarding if you’re passionate about the subject, due to the content and opportunities on offer."

Apprenticeships

Chef de Partie

A chef de partie is responsible for running a specific section of the kitchen. This type of chef usually manages a small team of workers; which must be keep organised so that dishes go out on time and the work area remains clean and orderly. However in smaller kitchens a chef de partie may work independently as the only person in their section.

Commis Chef

When you study for a commis chef apprenticeship, you will learn how to prepare food and carry out basic cooking tasks under the supervision of a more senior chef. The primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen, therefore having the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired.
