Granola - Jane Servin '21

Equipment

    • Baking sheet

    • Mixing bowl

    • Measuring cups

    • Measuring spoons

Ingredients

  • 1/3 cup maple syrup

  • 1/3 cup packed (dark) brown sugar

  • 4 teaspoons vanilla extract

  • 1/2 cup canola (or vegetable) oil

  • 1/2 teaspoon salt

  • 4 cups rolled oats

    • Optional ingredients:

      • Up to 2 cups total toppings: chopped raw almonds, pecans, flax seeds, coconut flakes, chia seeds, raisins

      • Cinnamon (1-1.5 teaspoons), pumpkin pie spice (1 teaspoon), and/or nutmeg (1/2 teaspoon)

Instructions

1. In a bowl, whisk syrup, sugar, vanilla and salt

2. Whisk in oil

3. Fold in oats and nuts/other toppings and spices (if using)

4. Transfer mixture to a baking sheet (either lined with parchment paper or greased with oil)

5. Press with spatula or spoon until compact

6. Bake 45 minutes at 325°F until lightly brown, rotating pan after 20 minutes


Note: If adding raisins, stir them into the granola when there are about 10 minutes of baking time left.
